What makes our sausage so special?

1. Our sausages are made from animals raised on pasture as regeneratively as the species allows.

2. Our fall pigs are finished on a diet that includes a large percentage of fruit pressings and fresh fruit, adding to the sweetness of the meat.

3. We use the entire animal and not just trim to make our sausage. This means all the select cuts are included in our sausages.

4. We do not use any allergens in our sausage. There is no whey or other milk products, soy, or gluten in any of our sausages.

5. Our animals live every day of their life on the farm, and because we are a licensed slaughter facility, even their last moments are spent enjoying their favourite meal. Our animals have ‘no bad days’ and never undergo the stress of being transported to a far-away slaughter facility. This ensures that the meat is not affected by the off-tasting stress hormones typical of industrial meat.

6. There are no Nitrites in our sausage. That said, if you would like to smoke our sausages at home, let us know and we will add nitrites so that you can safely smoke them at home. We are not licensed to smoke our products. Although the process is completely safe, VIHA requires a specially designated indoor facility to accomplish this and we do not have one.
